In at the deep end can you help please?
My html generated page has a list of items that appear like this:
<li><a href="/army_&_navy.html" title="Click to view all Army & Navy guns for sale">Army & Navy guns for sale</a></li>
I want to know where to look to change the generated name to hyphens not underscores....
Have a whole mess of files - not sure where I should start?
There are lots of php includes and bits being called from the database (which I also need to know how to find).....

you can change them right there in the code. I'm sorry I may not be following correctly. Keep in mind, if you're changing the links in your code, you'll also have to change the associated file names or the links will no longer work. If you're using Wordpress, which it sounds like you might be; just make the changes to the page and post names, and the links will all be updated for you.
