Why can't I hide the controls on a video that is shown with HTML 5 video stream?

I'm trying to turn off the controls on a video. I know you can do this by just excluding the 'controls' attribute on the video tag. I've found many examples using the VideoStream example from https://gist.github.com/ranacseruet/9826293 as I am but nothing about tweaking the video tag of the current video that is streaming.

My code looks like this

My problem is I can't seem to reach the DOM of the parent tags or any tag that I've wrapped around the included newvideo.php file that has the VideoStream class. How can I hide the controls of the video if I'm using Video Stream?
